  • 1 ¼ cups P.A.N. Precooked White Corn Meal
  • 1 cup icing sugar
  • 1 pinch of salt
  • ½ cup butter
  • 1 egg

For aromatizing:

  • 1 teaspoon cinnamon powder or
  • 1 teaspoon vanilla extract or
  • Zest of half a lemon

Preparation:

  1. Cream the butter for 2 minutes on medium speed in an electric mixer. Lower the speed to the minimum and add the icing sugar little by little, beat until you obtain a mixture without lumps.
  2. Increase the mixer speed and beat until fluffy.
  3. Add the vanilla extract, cinnamon or lemon zest, and add the egg.
  4. Add the cream of rice, P.A.N. Precooked White Corn Meal, and salt. Beat until the dough begins to show crumbly crumbs. Add the milk and mix until the dough pulls away from the sides of the bowl, forming a soft, slightly sticky ball.
  5. Divide the dough into two equal portions. Place one of the portions on waxed paper and cover it with another piece of paper of the same size. Roll out the dough to a thickness of ½ cm. Repeat for the other portion.
  6. Refrigerate for 2 hours. If a better consistency is desired, refrigerate for 24 hours.
  7. Preheat the oven to 180 °C. Cut the biscuits into the chosen shapes. Arrange the biscuits on a baking tray.
